Donald,
Apologies if I'm stating the obvious, but you might find some of Antonio
Negri's work (some of it written with Hardt) interesting - his work is
very much influenced by deleuze and guattari. Negri's Marx Beyond Marx
has lots on the role of labour in capitalism (and as theorised in the
Grundrisse); Empire also considers the role of labour (and there's a bit
on the IWW union). You'll probably find the most relevent material in
Multitude, but I'm reluctant to suggest this as imho it's pretty much
the worst thing Negri has written (the account of war seems very flawed,
for starters...)
Negri's relationship with more 'conventional' Italian unions was rather
fractious, to say the least - see for example Callinicos' acount
